I am a chicken thigh lover, for me it’s the most tender and delicious part of the bird and when you pair it with honey and chili crisp it takes it to a whole new world of flavor.

Smoke at 275 for 30 minutes skin side up then flip and cook for another 30 minutes skin side down.
Raise the temperature to 325 and cook for another 10 to 15 minutes until the skin is crispy and the internal temperature is between 185 and 195°F
Prepare the honey sauce by whisking together, all ingredients, then dunk chicken thighs in the sauce before serving.
Notes:
This sauce will work with any type of chicken as well as Pork and shellfish, salmon, and other seafood.
You can try any Chili crisp you like but I have a clear and away favorite!! and it’s actually one of the cheapest and most authentic.
